During my visit, AperiPasta’s brisk energy partnered seamlessly with its adept kitchen team—particularly chef Orazio, whose creations were nothing short of revelatory. My orecchiette in nduja sauce arrived al dente, embracing a tender heap of burrata, imparting a balanced heat that lingers pleasurably well after each forkful vanishes. Across the table, a plate of spaghetti carbonara, tangled and rich without being ostentatious, echoed Roman authenticity rather than Olive Garden imitation.
