Led by the capable Chef Yoon, the restaurant flaunts fresh sashimi and the informative service offers a detailed introduction to the delicate creations swirled onto plates. Indeed, the soothing ambiance paired with attentive service makes any encounter noteworthy. My favorite was the miso cod—a symphony of umami nested between gentle waves of perfectly balanced flavors—that justified its reputation as London's standout dish.Although not all dishes ignite admiration (the adventurous sake flambé seems to knock taste buds askew), the more classical selections play to pure perfection. Here, traditional sushi molds hold their own, underscoring a straightforward but earnest ethos. The seats at the counter offer more than just an engaging view of sashimi artistry—they attest to the culinary reverence that pervades this spot. And despite some fleeting service feuds in past reviews, my visit found the staff endearing, poised between humility and grace; eager to amend, to serve again, and maybe pour another cup of plum sake.
