The robust “hei” essence of the Char Kway Teow harmoniously tangoed with my palate, while their renowned chili crab skillfully married taste with sense-memory; the spice-whisper and quantity of crab luxurious enough for two, its presentation an art piece, though admittedly, a tribute demanding deftness at consumption. The food speaks the command of authenticity with a grace note of innovation and culinary wisdom.
