His encyclopedic knowledge of oysters made each shuck an education and each sip of wine more poignant. Our martinis arrived as they should – expertly crafted – vibrant pauses before the symphony of seafood began.The evening crescendoed with stellar dishes: scallops drenched in tingling garlic butter, delicate hake seated atop saffron mash, and the unparalleled crème brûlée that superficially cracked under the spoon but warmed and soothed with each bite. While a minority might find some shells too resistant (lest we not forget the predicament with prawns encased in fortresses), the overall musicality here hums beautifully.
